Indian Cabbage Soup

Ingredients

  • 1 pound cabbage, chopped
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • dash salt and pepper to taste
  • dash hot sauce, to taste (optional)
  • fresh chopped cilantro

Directions

      1. Combine all ingredients except cilantro in a large saucepan.
      2. Allow to simmer for at least 20 minutes.
      3. Transfer half of the soup to a blender or food processor and process until smooth. Recombine the soup and reheat as needed.
      4. Stir in cilantro and add additional salt, hot sauce (optional), to taste.
